Ajitsuke Tamago sind in Sojasauce eingelegte Eier (ajitsuke = gew\u00fcrzt und tamago = Ei) und d\u00fcrfen klassischerweise auf keiner Ramen Suppe fehlen. Sie herzustellen ist wirklich einfach, man muss nur 3 -4 Tage warten bis die Eier gut durchgezogen sind. F\u00fcr diese leckeren Eier ist es wichtig eine gute Sojasauce zu verwenden, da dies den sp\u00e4teren Geschmack der Eier wesentlich pr\u00e4gt. Die Tamago Eier kann man auch gut ohne die Suppe verspeisen und sind mal eine nette Alternative zu den \u00fcblich gekochten Eiern zu Ostern. Auf’s Brot mit leckerem Schnittlauch oben daruf oder wer es sch\u00e4rfer mag mit einem Tupfen Wasabi Pannonia von phytonic<\/a> darf der Fr\u00fchling einziehen!<\/p>

Zutaten f\u00fcr 3-4 Eier<\/strong>
 
4 EL
Kamut Sojasauce<\/a>
4 EL Hon Mirin
6-8 EL Wasser

zum Einlegen:
ein schmales hohes Schraubglas<\/p><\/blockquote><\/figure>

Zubereitung<\/strong><\/p>

1. Sojasauce, Mirin und Wasser gut miteinander vermischen und in ein schmales Schraubglas geben.<\/p>

2. Die Eier wachsweich f\u00fcr 6-7 Minuten kochen und sofort in eiskaltem Wasser (mit Eisw\u00fcrfeln) abschrecken. <\/p>

3. Die Eier gute drei Minuten darin ziehen lassen, dann vorsichtig sch\u00e4len, da sie innen drin noch sehr weich sind.<\/p>

4. Die gesch\u00e4lten Eier in die Sojamischung ins Glas geben und eventuell mit einem Gewicht beschweren. Die Eier sollten vollst\u00e4ndig von der Sauce bedeckt sein. Das Glas zuschrauben und in den K\u00fchlschrank geben.<\/p>

5. Die Tamago Eier bis zu 3-4 Tage in der Sauce ziehen lassen.<\/p>
